I don't know about you, but pancake day is one of my favourite days of the year. While I stuff my face with pancakey goodness, it seems only fair that The Beagsâ„¢ also get their own plate too. These have been a firm favourite at Cwtches Dog HQ for a number of years and this year will be no exception. Hope you enjoy them as much as my gang do.
Ingredients
125ml oat or almond milk
2 eggs, separated
1 banana
100g rolled oats
2 tsp baking powder
1 tsp vanilla extract
spritz of oil
low fat yoghurt and fruit for topping
Method
Combine the milk, egg yolks, banana, oats, and baking powder in a blender and blitz to a smooth mixture.
In a seperate bowl, whisk the egg whites until they hold stiff peaks.
Whisk 1-2 tbsp of the whites into the batter, then fold in the rest.
Heat a non-stick pan over a medium heat and spray with a spritz of oil,
Pour approximately 2 tbsp of batter into the pan and cook for 1-2 mins, until the base sets and bubbles appear all over the top.
Flip and cook the other side for a minute.
Repeat in batches, making sure the top looks cooked before attempting the flip, or the centre will collapse.
Serve
with plain yoghurt and fruit
